Not every meal is going to be cooked from scratch. Here’s how to navigate the supermarket chicken aisle, avoid the hidden carb traps, and build a genuinely low-carb plate in under 20 minutes.
Sainsbury’s Southern Fried Breaded British Chicken Mini Fillets, 15 minutes in the air fryer, served over shredded iceberg with Hellmann’s Real Mayo and Cholula hot sauce — that’s a legitimate low-carb meal. It’s quick, it’s cheap, it’s satisfying. The question is knowing which products actually work and which ones are quietly loaded with carbs despite looking similar on the shelf.
The hidden carb problem with breaded chicken
The fundamental assumption most people make is that chicken — a zero-carbohydrate protein — retains a broadly acceptable carbohydrate profile even with a light coating. That assumption is wrong once you understand how industrial breading works.
Commercial coated chicken undergoes a three-stage enrobing process. First, a pre-dust layer of wheat flour or modified corn starch is applied directly to the raw meat to absorb surface moisture so subsequent layers bond properly. The product is then submerged in a liquid batter containing refined flours, expansive starches, and chemical leavening agents. Finally, an outer layer of extruded breadcrumbs is applied — formulated with added dextrose specifically to trigger rapid browning in a factory oven or fryer.
The combined pre-dust, batter, and crumb can account for 30 to 45 percent of the product’s total weight. Since wheat flour and breadcrumbs are approximately 70 to 75 percent carbohydrate by composition, replacing nearly a third of the product’s mass with these ingredients produces a predictably high carbohydrate load.

- Low-Carb Friendly — under 10g carbs per 100g
- Borderline — 10–15g per 100g (viable with strict portion control and zero-carb sides)
- Avoid — over 15g per 100g (glycaemic impact too significant)
Coating types and carb ranges
Tempura and heavy wet batters (15–22g/100g): The highest carb category. Any product with “tempura,” “crispy batter,” or “buttermilk batter” in the name should be treated as off-limits.
Sourdough and “rustic” breadcrumbs (14–18g/100g): Counterintuitively, these premium-sounding coatings are often worse than standard crumbs. The thick, irregular structure absorbs significantly more fat and contains more carbohydrate mass per unit of surface area. Tesco’s Sourdough Breaded Chicken Fillet contains 17.3g/100g despite its premium positioning.
Standard southern fried dredge (12–17g/100g): Wide variance. Spice blend recipes often include dextrose or maltodextrin as anti-caking agents, adding hidden sugars. Morrisons Southern Fried Mini Fillets (13.6g/100g) are more viable than Waitrose’s equivalent (16.5g/100g).

Unbreaded, seasoned, or pre-cooked (under 5g/100g): The safest category. One exception: sticky glazes marketed as BBQ, honey mustard, or sweet chilli are invariably loaded with sucrose.

- Check internal temperature reaches 75°C for raw seasoned or marinated chicken

A note on UK nutritional labels
UK and EU food labelling law requires that dietary fibre is already excluded from the carbohydrate total printed on the pack. The carbohydrate figure you see is the net, digestible number. Do not subtract fibre again — doing so will cause you to significantly undercount your carbohydrate intake. Use the carbohydrate figure as printed — it is already your net carbs.
